I was thinking if I lost this device anyone could plug it into a PC and download a lot of conversations lol. Is it safe to simply plug it into a PC and select all folders, then delete? All my conversations are sync’d via the app.

Yes, it’s safe to do that. If all of your conversations have already synced to the app, you can connect the device to a computer, delete the files from the device’s storage, and they’ll remain available in your Pocket app.
Also, if Web Sync is disabled on your Pocket account, someone plugging the device into a PC won’t be able to access your recordings.
